ELABORATION

The grape harvest took place between October 9 and 10, 2021, manually in 10-kg boxes at dawn. A few minutes later, a second selection was made, bunch by bunch, on the table. After this, the grapes were destemmed and crushed before resting in stainless steel vats of less than 5,000 liters, where they fermented at a controlled temperature of 25°C. Punching down and pumping over were carried out every six hours during the 15-day fermentation period.

After this initial fermentation, manual racking was carried out, which ended with gentle pressing, preceding malolactic fermentation, which took place at a temperature of 21º.

Finally, the wine was placed in American and French oak barrels for 10 months, after which it was bottled and kept in the bottle rack for at least 4 months before being released to the market.
